Volcanic Meteor Shower
(Lentil Soup w/ Sausage)
What you'll need
5 Gallon Pot (T95 Engine compressor will work)
1 Frying Pan
Heating source.
16-ounces Lentils
2 x 28-ounce cans Diced Tomatoes
64oz Unsalted Vegetable Broth
32 ounces water
Salt
Black Pepper
Red Pepper Flakes
1/2 CUP Olive Oil
2 TABLESPOONS Minced Garlic
1 TABLESPOON Curry Powder
1 TABLESPOON Ground Cumin
1 teaspoon Thyme
3 Medium Onions Chopped up
1 LB Carrots (shredded or chopped)
2 LBS Mild Italian Sausage
Cut into 1-inch sections
PRO TIP: BROWN the sausages FIRST and THEN CUT
You can Also Use Sausage "Crumbles"
What to do
PREP:
OPEN all cans of DICED TOMATOES
DICE ONIONS
MEASURE OUT the curry, cumin, and thyme into/onto a small bowl/plate
POT:
Add Vegetable Broth
Add Water
Add Lentils to POT
Add Tomatoes to POT
Begin Heating POT using Medium-High Heat
PAN:
Add oil
Begin heating PAN over Medium-High heat
Add garlic
Add onion
Add carrots
Stir often
Cook Until Onion is translucent/soft about 5 minutes
Add the CURRY, CUMIN, and THYME mixture
Stir often
Cook another 30 seconds until fragrant
(PAN -> POT)
Add contents of PAN to POT careful not to splash!
Add 2 teaspoons Red Pepper Flakes to POT
Add Black Pepper Generously to POT
Brown sausage in PAN
Add sausage to POT careful not to splash
DON't FORGET:
Turn off the heat for PAN.
Remove PAN from heat.
Stir POT until well mixed
Bring POT to boil over High Heat
Reduce the heat of POT To Medium- Low
Partially cover POT
STIR every 15 minutes to prevent sticking
Simmer for 1 hour
Serve

About 10 Bowls.
NOTES:
Crew: "This is the best lentil soup we've ever had"
VEGAN STYLE: For the vegan version of the soup, simply do not add sausage.
PRO TIP FOR EASIER SAUSAGES:
While POT is cooking:
Place uncooked sausages on aluminum foil on baking sheet.
Place in oven
set oven to 400
Once the oven is preheated cook for 15 minutes
Cut sausages
Add to POT
