Laser Sunbeam Soup
(Celery Soup)
What you'll need
5 Gallon Pot (T95 Engine compressor will work)
1 Immersion Blender - Strongly recommended
(If you only have a regular blender see the notes section "B")
Heating source.
128oz Vegetable Broth
(Can substitute Chicken broth/ chicken bouillon)
(If using bouillon, you'll need 16 cubes and 128oz water. )
Salt
Black Pepper
4 TABLESPOONS Butter
(Can substitute olive oil)
4 TABLESPOONS Minced Garlic
2 Medium Onions
Chopped up
2 LBS Celery (about 4 stalks)
Remove Stems
Remove leaves
Cut into 1-inch sections
2 LBS Potatoes (about 6 "medium" potatoes).
Cut into 1-inch sections
1/2 CUP Parsley (OPTIONAL)
Used to make Soup a Green Color
What to do
Add Butter to POT
Heat POT over Medium-High Heat for 3 minutes
Add Onions
Cook 3 minutes
Add Garlic
Cook 1 Minute
Add Broth
Add Potatoes
Add Celery
Stir POT until well mixed
Bring POT to boil over High Heat
Reduce the heat of the POT To Medium- Low
Cover POT
Simmer for 1 hour.
Turn off heat
Add Parsely (OPTIONAL)
Blend
For IMMERSION blender
Make sure the IMMERSION blender's blades are completely submerged in soup!
Blend until smooth (Be Careful! The Soup is very hot!)
Serve
Servings
About 10 Bowls.
NOTES:
A)
Some people add sour cream to the soup when they serve it, the CREW found they disliked the taste of the soup when sour cream was added. So we did not include it as part of the recipie.

B)
BLENDING SOUP WITH REGULAR BLENDER:
(I Suggest YouTubing this before attempting)
Allow the soup to cool for a few minutes before blending. ...
Remove the center cap from the lid of your blender.
Fill blender halfway. ...
Place a towel over the top of the blender. ...
Blend the soup.
Pour pureed soup into a pot or bowl.
Repeat with remaining soup.
