Cutting Board
Knife
Heating Element (OVEN)
Large bowl
Small Bowl
Tongs
INGREDIENTS:
Marinade:
3 tbsp. za'atar spice blend
6 tbsp. extra-virgin olive oil
2 Large Lemons or 3 Medium Lemons
NOTE: Can substitute 6 TABLESPOONS lemon juice1 tbsp. salt
1 TABLE SPOON cinnamon
1 TABLESPOON cumin
PROTEIN & STARCH
4 skin-on, bone-in chicken thighs (about 2 lb. total)
NOTE: CAN SUBSTITUTE CHICKEN BREAST
Just cut a large breast into quarters1 Large Sweet Potato Cut into 1.5 inch cubes
VEGGIES
1lb. broccoli
1 red onion
TOPPING
1/4 c. tahini
3 TABLESPOONS Cold Water
2 TABLESPOONS OIL
Lemon wedges, for serving
What to do
PREHEAT OVEN to 425 F
WHILE OVEN PREHEATS:
Make the marinade
WHISK MARINADE in LARGE BOWL
3 TABLESPOONS za'atar spice blend
6 tbsp. Olive Oil
Juice from 1 LARGE LEMON or 2 medium lemons
(4 Tablespoons lemon juice)
1 TABLESPOON salt
1 TABLE SPOON cinnamon
1 TABLESPOON cuminSET ASIDE
1/4 Cup MARINADE for VEGGIESTOSS Chicken and Sweet potatoes in MARINADE using tongs
KEEP Chicken and Potatoes in Marinade until oven preheats
Can marinate longer if desired
AFTER OVER PREHEATS:PLACE Chicken and Sweet potatoes on baking sheet
PLACE baking sheet into oven
SET a timer for 20 minutes
MEANWHILE:
Prep The veggiesCUT up veggies into 3/4 inch cubes
Broccoli
Red OnionTOSS veggies in marinade set aside using tongs
For safety, you should use a new bowl
I use the same bowl we just used for the chicken and veggies
WHEN TIMER IS DONE:PLACE Veggies on another baking sheet
PLACE baking sheet into oven
SET a timer for 20 minutes
MEANWHILE:
Make the TOPPINGWHISK in SMALL BOWL
1/4 c. tahini
3 TABLESPOONS Cold Water
2 TABLESPOONS OIL
2 TABLESPOONS Lemon Juice (1/2 a large lemon)
1/2 TEASPOON SALT
WHEN 2nd TIMER GOES OFFCAREFULLY Remove baking sheets from oven
USE OVEN MITTS THE TRAYS WILL BE HOT!SERVE With Lemon Wedges
TIPS & TERMINOLOGY:
I like to use lemons and cut an "X" on the top then just squeeze out the juice.
I use 1 LARGE lemon for the marinade then
1/2 a large lemon for the topping
then the other half for lemon wedges
