(Vegetable Beef and Barley)

What you'll need

  • 5 Gallon Pot (T95 Engine compressor will work)

  • Heating source.

  • 12 ounces Tomato Paste

  • 24 ounces water ( you can use the empty tomato paste can)

  • 64oz Unsalted Beef Broth

    • (Space Rat or vegetable broth works just as well)

  • Salt

  • Black Pepper

  • 2 TABLESPPONS Olive Oil

  • 1 TABLESPOON Minced Garlic

  • 1 TABLESPOON Oregano

  • 2-4 BAY LEAVES

  • 1 Cup Dried Barley

  • 3 Medium Onions Chopped up

  • 2-4 lbs Vegetables (whatever you can find)

    • Fresh - (cut up into small pieces)

    • Frozen

    • Canned

  • 2 LBS Chuck Steak

    • Any Steak should work

    • Cut steak into cubes about 1 inch one side

    • Marinate overnight in red wine vinegar if possible

What to do

  1. Put olive oil in the bottom of the POT.

  2. Add Steak

  3. Brown Steak over Medium-High Heat

  4. Add onions

  5. Add garlic

  6. Add oregano

  7. Add bay leaf

  8. Cook until onions are soft

  9. Add broth to the pot.

  10. Add in Tomato Paste.

  11. Add water

  12. Add all the vegetables

  13. Bring the pot to a boil using High heat.

  14. Reduce heat to Medium-Low to simmer.

  15. Cover

  16. Simmer covered for about 45 minutes to 1 hour

  17. Add barley and stir until mixed (About 30 seconds)

  18. Cook covered for another 30 minutes

  19. Serve.

  20. Add salt and pepper to taste.

Servings

About 10 Bowls

NOTES:

This will probably be thick, if saving leftovers you might want to leave a little space and add a little water to each container. Estimated add 2-3 ounces of water for each 16-ounce container.
