What you'll need
EQUIPMENT:
3 to 5 Cookie sheets/ baking sheets depending on size
Oven
parchment paper
Knife
Mixing bowl
Wooden spoon for mixing
Microwave safe glass
INGREDIENTS
1.5 CUPS Pancake Mix (Pearl Milling/ Aunt Jemima/ Store brand Equivalent)
3 CUPS ROLLED OATS
DO NOT USE QUICK OATS2 TABLESPOONS Cinnamon
1/2 teaspoon Salt
1 teasspoon vanilla
1 CUP Butter (SOFTENED)
(1 CUP = 1 STICK)1 CUP Raisins
1 CUP PACKED BROWN SUGAR
1/2 CUP GRANULATED SUGAR
2 LARGE EGGS
2 Ounces Water
What to do
Lay out parchment paper on baking sheets
You can grease the sheets if you don't have parchment paperPreheat oven to 350
PLACE water and butter in glass
Microwave in 30 second intervals until butter is soft, not melted
PUT all the ingredients into a mixing bowl, mix until well blended.
DROP cookie dough onto baking sheets
NOTE: Leave space between the cookies, they will expand as they cook
Typically I get about 12 cookies to fit per sheet
(About 2 tablespoons worth - or about a 1" ball)WHEN oven PREHEATS, Place baking sheets into oven
CAUTION HOT!BAKE For 12 to 14 minutes
REMOVE COOKIES FROM OVEN and let cool 10 minutes.
CAUTION HOT!Store cookies in an airtight container. They should keep several days :)

OPTIONAL ICING:
1 CUP Confectioners sugar
1/2 teaspoon vanilla
1 TABLESPOON Milk OR orange juice
NOT BOTH.
Mix Sugar, Vanilla and orange juice.
Add More Orange Juice 1 teaspoon at a time until the icing is just barely thick enough so you can pour it.
Pour Icing over cookies and enjoy!
If using Milk, be sure to refrigerate cookies!
