(Tomato Bisque)

What you'll need

  • 5 Gallon Pot (T95 Engine compressor will work)

  • 1 Immersion Blender - Strongly recommended

    • (If you only have a regular blender see the notes section)

  • Heating source.

  • 64oz Vegetable Broth

    • (Can substitute Chicken broth/ chicken bouillon)

    • (If using bouillon, you'll need 8 cubes and 64oz water. )

  • 4 TABLESPOONS Olive oil

  • 1 Teaspoon Salt

  • 1/2 Teaspoon Black Pepper

  • 1 TABLESPOON Sugar

  • 1/4 Teaspoon Cayenne Pepper

  • 1 TABLESPOON Dried Basil

  • 3 TABLESPOONS Minced Garlic

  • 1 Pint Heavy Cream

  • 2 Medium Yellow Onions

    • Chopped up

  • 4 Celery Sticks

    • Remove Stems

    • Remove leaves

    • Cut into 1-inch sections

  • 2 x 28-ounce cans Crushed Tomatoes

What to do

  1. Add Olive oil to POT

  2. Heat POT over Medium-High Heat for 3 minutes


  1. Add Onions to POT

  2. Add Celery to POT

  3. Add Salt to POT

  4. Add Pepper to POT

  5. Add Cayenne to POT

  6. Add Basil to POT

  7. Cook 5 to 6 minutes until Onion is translucent


  1. Add Garlic to POT

  2. Cook 1 Minute, While Stirring


  1. Add Broth to POT

  2. Add Tomatoes to POT

  3. Add Sugar to POT

  4. Stir POT until well mixed


  1. Bring POT to boil over High Heat

  2. Reduce the heat of the POT To Medium- Low

  3. Cover POT

  4. Simmer for 1 hour.

  5. Turn off heat

  6. Blend

    1. For IMMERSION blender

    2. Make sure the IMMERSION blender's blades are completely submerged in soup!

    3. Blend until smooth (Be Careful! The Soup is very hot!)

  7. Add Heavy Cream

  8. Mix 1 minute

    1. Can use an Immersion blender on low to mix

  9. Serve

About 10 Bowls.

NOTES:

BLENDING SOUP WITH REGULAR BLENDER:

(I Suggest YouTubing this before attempting)

Allow the soup to cool for a few minutes before blending. ...

  1. Remove the center cap from the lid of your blender.

  2. Fill blender halfway. ...

  3. Place a towel over the top of the blender. ...

  4. Blend the soup.

  5. Pour pureed soup into a pot or bowl.

  6. Repeat with remaining soup.
